How to throw a simple, elegant Galentine’s Day brunch

Welcome to February – the month full of hearts, pink things and lots and lots of sugar. Whether you have a significant other or are desperately trying to avoid the holiday all together, you have no doubt walked into a store and been overwhelmed by the spirit of love.

One of my favorite things to do in February is to throw a brunch at my house for my favorite gals and celebrate being awesome humans. Last year, we had a waffle bar and a lil’ polaroid photoshoot! You can read more about that here.

The Galentine’s Day Brunch is an event for your besties and mimosas. Once you have those two elements, you just add whatever fits your crew!

This year, I decided to pivot from the build it yourself brunch to a spread of cute sweets with fruit. I tend to get overzealous when I make food for people, so I tried to keep everything very simple and affordable. I wanted to show that you can make an amazing spread without spending too much money or cooking for hours. 

First, I made mini pancakes and stacked them using buttercream. I topped them with fresh blueberries. My secret here is that I used the H-E-B Whataburger brand pancake mix, which is awesome. I also served them with blueberry syrup.

These looks so cute served on a platter. If you have powdered, a recommend sprinkling it on for a little decoration!

Then, I headed to my local Shipley’s donuts for some festive donuts and donut holes. Altogether, this cost about $5 and all I had to do was put it in a bowl and on a platter.

My last sweet addition was some citrus fruit. I peeled a Navel Orange, a Cara Cara Orange, A Blood Orange, a Tangerine and a Grapefruit. Then, I sliced them vertically and placed them on a cutting board with the donut holes.

I added some savory avocado toast for those who wanted something saltier. I baked the bacon in the oven in a heart shape and a simply used a cookie cutter to cut the toast into a heart shape.

Then I smashed the avocado onto the toast and served. I left the bacon on the side, so people who do not eat pork or are vegetarians could still enjoy the toast.

And the final touch – classic mimosas. Last year, I offered up a mimosa bar, but it was clear to me everyone just wants some champagne and OJ.

This entire brunch spread cost me about 30 dollars, and I had leftovers!
